With the arrival of autumn, temperatures have dropped and rainy days have become common, which means that we spend more time in the warmth of the home. Cold days are ideal to spend under a blanket with your favorite series and a cup of tea, and quick, simple and juicy muffins also fit perfectly in that scenario. It is a favorite treat for many, and one of the reasons is that it is extremely easy to prepare.
If you have two ripe bananas at home, it's the perfect moment to roll up your sleeves and reward your taste buds with the finest delicacy, the recipe for which is below.
INGREDIENTS
- two ripe bananas
- two eggs (in the vegan version, replace with chia or flax seeds soaked in water)
- 100 g of butter (replace with coconut oil in the vegan version)
- 200 g of flour
- baking powder
- 100 ml of milk (can also be plant-based)
OPTIONAL
- 100 g of cooking chocolate
- 100 g of sugar
- 30 g of blanched flaked almonds
PREPARATION
To begin with, peel two ripe bananas, cut them in half and place them in a bowl. Bananas need to be chopped to a liquid state, in which case it would be ideal to use a stick mixer. Then add two eggs, milk and melted butter (or chia or flax gel pre-soaked in water, along with coconut oil) to the bowl and continue mixing with a hand mixer. A useful tip is to melt the butter and chop the chocolate into pieces before making the mixture. When the mixture is combined, add all the dry ingredients, i.e. flour, baking powder, if desired, sugar and chopped chocolate, and continue mixing by hand.
For muffins with a lower sugar content, sweeten the mixture with two tablespoons of honey or erythritol, and instead of chocolate, add pieces of fruit such as juicy and sweet pineapple - dried or fresh . Why pineapple? This fruit is rich in bromelain, one of the most well-known fruit enzymes that help break down food and, consequently, better digestion. However, this enzyme is also used in cosmetics, specifically in enzyme exfoliants such as the Enzyme Face Mark, since it easily breaks down proteins into amino acids. This alone will break down dead skin cells and make the complexion shiny, hydrated, smoothed and soft.
When the mixture is combined by mixing, it's time to prepare the muffin pan in which you will first place the baskets. After that, fill 3⁄4 of the basket with the mixture, and finish the preparation for baking with blanched flaked almonds. Turn on and heat the oven to 180 °C and bake the muffins for 15-20 minutes. After the muffins have cooled, enjoy the juiciest treat!
